In this recipe, we will guide you through the process of making a mouthwatering dessert called Kaddu ki Kheer with Sabudana. This creamy and flavorful dessert combines the goodness of bottle gourd, Basmati rice, almonds, and cashews to create a delightful treat. Follow the steps below to prepare this delectable Kheer.

Start by gathering the necessary ingredients, including 1 liter of milk, crushed bottle gourd, Basmati rice soaked in water, almonds, cashews, Khova, Sabudana (sago), cardamom powder, and sugar.
Begin the cooking process by boiling the milk. Simultaneously, peel and cut the bottle gourd into small pieces.
Boil the bottle gourd in a separate pan with a cup of milk for approximately five minutes, ensuring there are no lumps.
Grind the almonds and cashews, leaving them slightly crushed, and then grind the Basmati rice with some water.
Combine the ground rice with half a cup of water to prevent lumps and mix thoroughly. Add the partially ground almond and cashew mixture to the rice.
Once the bottle gourd is properly boiled, add the mixture to the rice, almond, and cashew mixture, but do not add sugar at this point.
Wash the Sabudana with water, ensuring it is properly cleaned. Then, add it to the heated milk mixture and boil for an additional five minutes on low heat.
After the Sabudana and rice are fully cooked, add Khova either by mixing it in milk or directly into the mixture.
Stir continuously for a minute, then add sugar to taste. Additionally, add cardamom powder for a delightful aroma and flavor.
